Simple vinagrette recipe, and ingredient feature: Brewers Yeast

I have been experimenting a lot with Brewers Yeast as an ingredient.  Why you may ask.  Brewers Yeast contains a high amount of B vitamins, Protein, and Alpha-Lipoic Acid which is a featured supplement here.  Brewers Yeast also has a unique nutty/cheesy flavor which enhances a lot of dishes.  I have been sprinkling it on my homemade hummus, and on salads with amazing success.  I find that if you use the correct amount, you can actually omit the salt since it has a nutty salty aftertaste.

Check out this recipe.  It is super easy, and amazingly healthy.  Don't skimp on the ingredients.  Buy the best olive oil and Balsamic vinegar that you can afford because it makes a HUGE difference, trust me.  A little goes a long way, and quality of the ingredients makes the recipe come alive.  I buy the Brewers Yeast online at Swansons Vitamins.


 
This makes enough for a good size salad for 2-4 people:

1/4 cup Extra Virgin Olive Oil
1 Tablespoon Balsamic Vinegar
1 teaspoon Dijon mustard
1 Tablespoon Brewers Yeast
1 Clove garlic peeled, and  grated with cheese grater (optional)

Combine all ingredients and stir with a fork until thick and smooth.
